Turtle Caramel Cake


For the Cake:

  • 2 cups all-purpose flour
  • 1 3/4 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water

For the Caramel Sauce:

  • 1 cup unsalted butter
  • 2 cups brown sugar, packed
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract

For the Turtle Topping:

  • 1 cup pecans, chopped
  • 1/2 cup chocolate chips


  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
  2. Make the Cake Batter:
    • In a large mixing bowl, whisk together flour, sugar, cocoa powder, baking soda, baking powder, and salt.
    • Add eggs, milk, vegetable oil, and vanilla extract. Beat on medium speed until well combined.
    • Gradually add boiling water, mixing until smooth. The batter will be thin, but that’s okay.
  3. Bake the Cake:
    • Pour the batter evenly into the prepared cake pans.
    • Bake in the preheated oven for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
    • Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
  4. Make the Caramel Sauce:
    • In a saucepan over medium heat, melt the butter.
    • Stir in the brown sugar and heavy cream. Bring the mixture to a boil, stirring constantly.
    • Reduce the heat and simmer for 5 minutes, stirring occasionally.
    • Remove from heat and stir in the vanilla extract. Let the caramel sauce cool slightly.
  5. Assemble the Cake:
    • Place one cake layer on a serving plate. Spread a layer of caramel sauce over the top.
    • Sprinkle chopped pecans and chocolate chips over the caramel.
    • Repeat this process with the remaining layers.
  6. Finish the Turtle Topping:
    • Drizzle the top of the cake with additional caramel sauce.
    • Sprinkle with more chopped pecans and chocolate chips.
  7. Serve and Enjoy:
    • Slice and serve the Turtle Caramel Cake. Enjoy the rich, indulgent flavors!
